Mr. Hennessy started working with his father in this shop when he was 10 yrs old, and now works with his adult son. His shop specializes in the more unusual cuts of meat for the adventurous cook. Having re-negotiated his lease, Mr. Hennessey wanted to upgrade the shop and its fittings. CRS had been talking to him for about 6 years and in that time had given him various references of other shops they had refitted. Mr. Hennessy became a fridge tourist, visited the other shops, and eventually chose an L-shaped run of Ergo Plus.
