When the shop next door became vacant, Mr. Gibson saw an opportunity to reorganise and expand his business. In the vacant shop space he opened a new delicatessen. He used the back of shop area to increase the cold-room space and staff facilities for the existing butchery and the new business. The new delicatessen next to the established butchery proved to be a little oasis of fine foods, and an extra reason for customers to come and buy.
